Strawberry Fields Fruit Leather

Fruit leather can be made with any type of fruit in season, as long as it is totally ripe, and doesn’t have any bad spots. It makes a perfect snack for children, and is a convenient way to preserve nature’s bounty without adding any preservatives!

Ingredients:
  • about 30 ripe strawberries, stems removed
  • 7 Medjool dates, pits removed
Puree the strawberries and dates in a blender until very smooth. Taste to make sure the mixture tastes sweet enough for you; otherwise, add more dates. Pour the fruit mixture onto Teflex sheets to prepare for dehydration. Strive for 1/8 inch or so of thickness. Spread it more evenly with the spoon if needed. Dehydrate at 105 degrees F for anywhere between 15-17 hours. Check consistency often at the end of the drying time to make sure the fruit leather is still pliable and can be easily rolled. Overdried leather is very tough and chewy. Peel the leather from the Teflex sheet, and if still wet and sticky in the middle, flip it over, and let dry a couple more hours. Once the drying process is completed, cut the leather with scissors into the shapes you want. It can be stored in an air-tight container in a dark place at room temperature or in the refrigerator. It can even be frozen if necessary. Please note: Preparation time is 10 minutes plus time for dehydrating.
