Raspberry Coconut Whip
Raspberries are a perfect Valentine’s Day treat. The whip makes a tasty holiday alternative (or addition) to your daily smoothie. Add more coconut “meat” if you want the whip to be even thicker.

Serves: 1-2
Ingredients:
- 2 cups fresh raspberries (you can substitute with frozen ones)
- 1 cup coconut water from a young Thai coconut
- 4 Medjool dates, soaked for 20 min. and pits removed
- ½ cup coconut “meat”
- seeds of 1 vanilla bean, or ½ tsp of vanilla extract
- 1 tsp. fresh lemon juice
- pinch sea salt
Directions:
Drain water from the dates, and chop them. Place all ingredients into a high-powered blender and whip on high until well blended. Garnish with fresh raspberries and/or fresh or dry coconut.
