Cut the vegetables of your choice—the list below is just a suggestion. Arrange them in a large bowl. Make a delicious dressing. Then add some complex carbohydrate, soaked. Ingredients for your Simplicity Salad:
- 2 cups of lettuce
- 1 cup of purple cabbage
- 2 ripe tomatoes
- 1 large cucumber
- 1 green bell pepper (add orange or yellow if you wish)
- 1 red bell pepper
- 1 radish
- 1 cup bulgur
- 3 Tbsp of lemon juice
Ingredients for your dressing:
- 4 Tbsp of coconut oil
- 2 Tbsp of lemon juice
- ½ tsp of ginger, grated
- ½ tsp garlic powder
- Salt and pepper to taste Instructions
Soak the bulgur wheat overnight. Six to eight hours is best. You may substitute quinoa for bulgur. You’ll know the bulgur is well hydrated when it can be chewed easily. Sprinkle a few drops of lemon juice on top. Place the bulgur to one side of the bowl.
Cut the tomatoes into thin slices or whole wheels. Set these next to the bulgur. Cut thin slices of cucumber. Roll them into flowers as in the photo and set these next to the tomatoes. Add radish wheels. Cut the peppers into thin strips and arrange these next to the radishes, cut strips of cabbage alongside as well. Cut the lettuce with kitchen scissors and use it to fill the empty spaces in your bowl.
For the dressing, blend all the ingredients and until the mix is smooth. Spoon the dressing over your Simplicity Salad and enjoy. If you like, sprinkle some aromatic herbs or spices on top.
