Carrot Cake Smoothie

This smoothie is special. Its combination of flavors reminds of a sumptuous carrot cake. Why? Because it uses the same basic healthy ingredients—carrots, raisins, and cinnamon.

You can enjoy this smoothie as a complete breakfast or as a dessert. For a Little extra delight, let’s add some banana and peach. To enrich this recipe even more, use chia seeds.

Chia’s hallmark is its ability to hydrate. Chia absorbs up to nine times its original volume in water. It then forms a gel around the seed, lending it a nice texture. Chia is rich in energy, offering omega-3 fatty acid, proteins, calcium, iron, zinc, fiber, and antioxidants. No doubt, chia stands worthy of the name superfood.

This smoothie has it all: flavor, texture, and fabulous nutritional benefits.

Ingredients:

  • 2 large bananas
  • 1 small carrot
  • 2 peaches
  • ¼ cup of blonde raisins
  • 1 teaspoon of cinnamon powder
  • 1 tablespoon of chia seeds
  • 1 ½ cups of water.

Instructions:


Soak the chia seeds for two hours in half a cup of water. Add a further cup of water to blend the rest of the ingredients. Peel the carrot and cut it into slices. Peel and slice the bananas.

Cut the peach in half and discard the seed. Keep the peach skin for more fiber, if you like. Pour the remaining cup of water into your blender jar, along with the bananas, sliced carrots, raisins, peaches, and cinnamon. Blend till you get a homogeneous smoothie.  Then pour in the water with the hydrated chia.

Mix for a few more seconds. If you prefer, you can even mix it with a spoon, at this stage, rather than your blender, so as not to break the chia seeds.
