Heartfelt Beetroot Gazpacho
Gazpacho is a traditional cold soup of Spanish cuisine, typically made with ingredients such as cucumbers, tomatoes, peppers, and onions. However, to make a healthier version of the dish, soaked oats can be used instead to achieve the same creaminess and binding effect. To minimize the intense taste of raw beets, I recommend combining raw beets in equal parts with tomatoes. The result is a delicious and nutritious dish. Ingredients:
• 2 tablespoons oats, soaked overnight
• ¼ cup of water
• 2 tablespoons lime juice
• 2 tablespoons of oil of your choice
• 1 medium beet
• 1 cucumber
• 3 tomatoes
• 1 small onion
• 1 red bell pepper
• 1 clove garlic
• Salt to taste
• To decorate heart cutters of different sizes and a small beet.
Peel and chop 1 beet, 1 cucumber, 3 tomatoes, and 1 onion into medium-sized pieces. Remove the veins and seeds from 1 bell pepper, and chop it into large pieces. Place the soaked oats and cucumbers in a blender and blend for about 3 minutes until a smooth mixture forms. Then add the tomatoes, beets, onion, bell pepper, and 1 garlic clove and continue blending until you have a creamy and homogeneous mixture. Taste and adjust the seasoning with salt as desired. Slice the beets and use cookie cutters or a knife to create heart-shaped toppings for a crunchy garnish. Serve and enjoy!
