Ingredients:
• 1 green cabbage
• 1 purple cabbage
• 1 teaspoon coarse salt
• 1 tablespoon of allspices
Instructions:
Wash the cabbages well and cut them into thin strips. In a large bowl, combine the cabbage, coarse salt, and allspices. Massage the cabbage with your hands to release its juice. Place the cabbage in a fermentation jar with a lid.
Place a weight on the cabbage to keep it submerged in its juice. Let the sauerkraut ferment for at least 2 weeks, or until it reaches the desired flavor.
Tips:
• For a more intense flavor, you can add 1 tablespoon of dill seeds or 1 teaspoon of ground cumin.
• If you don't have a fermentation jar, you can use a glass container with a tight-fitting lid.
• To prevent the sauerkraut from spoiling, make sure the weight is always on the cabbage.
• You can store the sauerkraut in the refrigerator for several months.
